For that matter, why can't I check all boxes in gmail in the first place? I would say its ironic, but I don't want to sound like a whiney tech hipster, so I'll just say its stupid.

  Any chance you could add a vertical row of around 16 check boxes, and then user can uncheck whatever boxes they want manually? Then allow the user to save those unchecked box settings? This would be beneficial for users that unchecking the same boxes over and over.
